Creamy oats soaked overnight with Greek yogurt, crunchy pistachios, and chia seeds for a protein-packed morning meal.

# What You'll Need:

→ Base

01 - 1/2 cup rolled oats
02 - 1/2 cup milk (dairy or plant-based)
03 - 1/4 cup Greek yogurt
04 - 1 tablespoon chia seeds
05 - 1/2 teaspoon vanilla extract
06 - 1 tablespoon honey or maple syrup (optional)

→ Nuts

07 - 2 tablespoons shelled pistachios, chopped

→ Toppings (optional)

08 - Additional chopped pistachios
09 - Fresh fruit or berries

# Directions:

01 - In a jar or bowl, combine rolled oats, milk, Greek yogurt, pistachios, chia seeds, vanilla extract, and honey or maple syrup if using. Stir until thoroughly mixed and all ingredients are well incorporated.
02 - Cover the container and refrigerate for at least 6 hours or overnight to allow oats to soften and flavors to meld together.
03 - In the morning, stir the oats thoroughly. Top with extra chopped pistachios and fresh fruit or berries if desired. Serve cold, or warm gently in the microwave if preferred.

# Expert Tips:

01 -
  • You literally stir it together in five minutes before bed and breakfast handles itself
  • The texture transforms into something like pudding, but with that satisfying chew from the oats
02 -
  • Steel-cut oats will not work here, they stay stubbornly crunchy no matter how long they soak
  • The mixture might look too thin when you first make it, but chia seeds plump up significantly overnight
03 -
  • Use a wide-mouth mason jar so you can actually get a spoon in there without making a mess
  • Stir in half the pistachios the night before and save the rest for topping so you get both soft and crunchy textures
